The Oscars, a $10 meal, and Chocolate Meringue Cookies

Thanks for stopping by, it’s my first post!

Tonight my husband made a home cooked meal for under $10, and it fed three of us. (Just so you know, Ron likes to cook when he has time, which isn’t often. But tonight was the Academy Awards, and he felt like eating a nice dinner before settling in to watch the show, and he knew I wouldn’t feel like cooking because I’m dieting. So he did what any HUNGRY husband would do when he hasn’t had a good, home-cooked meal in a while. COOK IT HIMSELF!) The menu? Pot roast, potatoes, and carrots. He said it was easy– he bought a 2 lb. beef pot roast, threw it in the pan and covered it in chicken broth, added some peeled carrots and potatoes, and cooked it at 375 degrees for a couple hours. It was DEELISH! My 16 year-old daughter ate most of the beef– five pieces– but I did happen to snag a couple slices. Ron has a tendency to under-season, so I gave the sea salt and pepper grinders a whirl over my plate. I also like things SPICY– so poured on the hot sauce. The meal was easy, yummy, and cheap– and best of all NOT cooked by me! My FAVORITE kind of meal.

For dessert my daughter– an aspiring bakery owner– baked up some chocolate meringue cookies, which were low cal and low fat. PERFECT! They were crunchy morsels of sweetness.

My contribution? The dishes. I actually like to clean (okay don’t hate me ALREADY!) so I was a happy camper.

The evening turned out even better when Kathryn Bigelow won Best Director for the Hurt Locker. First woman director to win! We were rooting for her, and we were so excited to hear her name called. The perfect ending to a great evening.

    Love it! I started watching the Oscar stuff at 4:00 and hung in ’til the fitting end with Sandra and Katherine taking home the golden statue. We did hor d’ouvres, champagne, and brownies. I love awards season! Hope all is well and your waist is responding to your outstanding discipline. Miss you
